Behold. My new favorite way to eat sweet potatoes. Not that there is a bad way.
Bake potato at 400 degrees for 30 minutes, until adequately squishy. I prick mine with a fork.
Slice it open and pinch ends to create a well. Add a drizzle of olive oil, salt, sour cream, chili powder and a squeeze of lime. You can also rub the skin with chili powder before the bake. Some finely chopped red onion and cilantro leaves were added after the photo. It was awesome. Enjoy.
P.S. Through some persistence, I learned how to make pictures bigger! Hells yeah.
